Royal Indian thali

Three Generations, one flame.

In the bustling lanes of Old Delhi, in the year 1952, our grandfather lit a tandoor that has never been extinguished. What began as a humble eatery serving Mughlai delicacies to the city's poets and princes has blossomed into a culinary institution.

Today, the same recipes — written in spice-stained notebooks — guide our kitchen. We grind our own masalas at dawn, knead our dough by hand, and treat every guest as our grandfather did: as nobility at a royal feast.

Traditional clay tandoor

Born in the tandoor's embrace.

Our clay tandoor — hand-built by Rajasthani artisans — burns at temperatures that transform humble ingredients into smoky poetry.

  • 480°C Clay Heat
Charcoal-fired tandoor reaches temperatures that sear meat in seconds, locking in juices and infusing smoke.
  • Stone-Ground Masalas
Whole spices ground daily on traditional sil-batta — no shortcuts, no compromises.
  • 24-Hour Marinades
Hung yogurt, ginger-garlic, and spice blends penetrate every fibre for tenderness beyond compare.
  • Farm-Fresh Sourcing
Vegetables from Punjab's Doaba region, dairy from Haryana, saffron from Kashmir.

The biryani transported me to a Lucknowi haveli I'd only read about. Every spice sang in harmony. This is not a restaurant; it's a time machine.

I've dined at the finest Indian establishments from London to Dubai. Maharaja Tandoor's dal makhani is, without exaggeration, the best I have ever tasted.

The ambiance is regal, the service impeccable, but it's the food that lingers — three days later, I'm still dreaming of the Peshawari naan.
